1 eggplant (about 400 g)
100/130 g bread crumbs
50 g grated parmesan cheese
a handful of pecorino
chopped fresh basil or parsley
1 clove of garlic
(Bread crumbs and oil for frying)
Cut the eggplant into cubes and boil it (put it in a bowl with water and salt before to boil). When the eggplant are cooked put it in a pan with a tablespoon of olive oil and a clove of crushed garlic and let it cook at high heat for a few minutes so to dry the excess water.
Let cool and pour into a bowl, add the bread crumbs, cheese, egg. basil. Mix the ingredients well. Form balls and then roll the ball in bread crumbs. Fry the eggplant balls until golden brown.
That’s it … easy, fast and tasty.
