(english) Burgers from A to Z :)

To prepare this tasty turkey burgers you need: burger buns,  turkey burger, sliced tomatoes, avocado, onions caramelized and some sauces, each that you prefer.
With a little effort  and a few simple ingredients you can make your burger buns, perfect for delicious homemade burgers! I found the turkey burger’s recipe in the book “You can cook”. This is a step by step cookbook  for kids, I find it very usefull to prepare delicious and tasty meals and have fun cooking with my son.  Vegetarian could use the Veggie Burger recipe on http://vedgedout.com/

Making bread burgers:  (for 10 rolls)

350 g white bread flour
100 plain flour (or 100 g plain wholemeal)
1 egg
40 g extra virgin olive oil
220 ml warm water
1 tsp honey
1 tsp salt
1tbsp dried yeast
sesame seed
milk (for brush the rolls)

In a bowl stir together  salt, flour and olive oil, then dissolve yeast and honey in the warm water and add to the flour. Mix to make a soft dough, adding more water if necessary. Knead the dough for 15 minutes, (use the heel of your hand to push it  down and away from you) until the dough is soft.  Transfer to a lightly oiled bowl, cover with plastic wrap and leave in a warm place for 2 hours. When the dough has doubled in size, transfer to a lightly-floured counter. Divide the dough in 10 equal pieces and shape it into rolls. Cover the rolls with a kitchen towel and let rest for 1 hour.
Pre-heat the oven to 200 C.
Brush with milk and decorate with sesame seeds. Then bake in the oven for 15 to 20 minutes.

you will need to prepare burgers:   (serves 4)

1 red onion
1 tbsp olive oil
1/4 cup brown sugar
1 tbsp balsamic vinegar
200 g (7 oz) lean ground beef (I used turkey)
1 cup fresh bread crumbs
1 egg yolk
2tbsp milk
1 tsp soy sauce
salt

chop the onion into small pieces. Heat the oil in a nonstick frying pan over low heat.  Cook until it’s oft. Stir in the sugar and balsamic vinegar. Cook stirring for 2 minutes until the onion caramelizes. Then transfer the mixture to a bowl and leave to cool. Add the beef, bread crumbs, egg yolk, milk soy sauce, salt. Mix everything together.
Form the burgers and cook over low heat.

For the onion caramelized:

3 onion (you can caramelize any type of onion)
3 tbsp extravirgen  olive oil
1 tbsp balsamic vinegar
1 tbsp brown sugar

Slice the onion into half-rings, thinner slices will cook faster.  Put the oil in a saucepan and add the onion and a pinch of salt. Continue to stir the onion and cook over medium-low heat. After 20 minutes add balsamic vinegar add brown sugar (I put 1 tbsp of sugar but you can add more) and continue to  cook for 10 minutes.

Now that all the ingredients are ready, you can prepare your delicious turkey burgers!
