(english) Zucchini espresso

A tasty side dish perfect to go with meat, fish or cheese, but it can be also a delicious appetizer. The recipe is pretty straightforward. You can prepare it just before eating.

Ingredients: (serves 4)

2 large zucchini
2 eggs
oil for frying

Alternative breading:
mixed with breadcrumbs few leaves of chopped fresh mint and one tablespoon of grated Parmesan …… success is guaranteed!

Wash the zucchini and cut them into slices not too thin. Beat the eggs with a pinch of salt. Dip the zucchini in the beaten egg then in the bread crumbs.
Heat the oil in a frying pan and fry until golden.
You can also cook them in the oven!

That’s it, your dish is ready in 15 minutes!
