(english) Chicken fajitas

They are ideal for an evening with friends,for a spring dinner,to have a meal in total relaxation. Everyone prepare his own wrap and it becomes a fun way to prepare food. A single course that is not too caloric if you choose the right ingredients 😉 The tortilla (not to be confused with the spanish tortilla) is one of the typical dishes of  the Mexican cuisine and it is the basis for many different recipes: enchiladas, chilaquiles quesadillas, tacos, fajitas. The name depends on the filling and how they are folded. They are commonly made from maize flour but they can be made also from wheat flour (tortilla de harina or tortilla de trigo) and placed on a hot griddle (comal), and cooked on both sides.

Ingredients: (about 4/5 tortillas)

1 chicken breast (600 g)
2 large tomatoes or a dozen cherry tomatoes
shredded lettuce
100 g of feta cheese (optional)

For the marinade:
juice of 1/2 lemon
a few tablespoons of oil
1 clove of garlic

For the green sauce:
1 avocado
1/2 onion (optional)
a few drops of lemon
3 tablespoons of extra virgin olive oil

Mash avocado with a fork and then mix together all the ingredients.

For the red sauce:
1 beetroot boiled
1 tablespoon of grated Parmesan
a little drop of vinegar (I use apple vinegar, I prefer it because it’s more delicate)
2 tablespoons extra virgin olive oil
3/4 cashews (optional)

Blend together all the ingredients until get smooth and creamy

For the white sauce:
a few tablespoons of mayonnaise
1/2 tbsp ketchup


Score the chicken breasts a few times with a sharp knife and season with a little salt and freshly ground black pepper.
Mix together all the ingredients for the marinade and marinate the chicken for about 30 minutes.
Brush a griddle pan with oil remove the chicken from the marinade and, when the griddle is hot, griddle the chicken until cooked through. Then cut into strips and set aside.
Heat each tortilla in a hot dry frying pan. Spread each one with the sauce that you prefer and arrange the chicken strips, add salad and tomatoes on top. Roll up and cut each tortilla in half and serve

You can add pepper or garlic or onion, spices or fresh herbs.
Cooking also depends greatly on our personal taste, the recipes are of a great help when you’re learning, but it’s nice and interesting  to experience, and so you can change the ingredients until you get the flavor that you want.
It becomes   stimulating and enjoyable experience
