These muffins with cheese and zucchini are really good. They are perfect for a snack or as part of your packed lunch. I prepare these for my son for school lunch. I found this recipe in the book: “The children’s baking book” and I however made some changes.
Ingredients: (makes 12, preparation 15 min.)
2 medium sized zucchini
120 g mature hard cheese (such as cheddar or gruyere cheese)
20/30 g grated parmesan cheese
280 g plain flour
175 ml milk
80 g melted butter
1 tbsp baking powder
Preheat the oven to 190 C
Line a muffin tin with paper muffin cases. Grate zucchini and cheese. In a large bowl sift together the flour and the baking powder add salt and mix together. Add grated cheese and grated zucchini, using the spoon mix well to combine all the ingredients. Beat together milk and butter with a fork, pour them into the bowl and stir until just combined (the batter should be lumpy)
Divide the mixture between the 12 muffin cases and sprinkle each one with grated cheese.
Bake , in the centre of the oven, for 20/25 minutes until risen, golden and firm.
Variation: You can prepare these with spinach and cheese, replace the grated zucchini with 180 g chopped baby spinach.
