Ingredients (for 4 people)
400 g of boiled broccoli
2 cloves of garlic
4 anchovy fillets in oil
150 g of grated Parmesan cheese
extra virgin olive oil
350 g of pasta
Put the oil in a pan, chopped garlic and anchovy fillets and leave to melt over a low heat, remove the garlic and add the broccoli pieces, let them cook for a few minutes and remove them from the heat.
Pulse brocoli a few times in a food processor, add the grated cheese and pulse again until blended. If necessary add a few tablespoons of the pasta cooking water.
Cook the pasta stir in the broccoli pesto, spoon in the grated Parmesan, toss the pasta well and serve.
